When most people think about a great cocktail, they think about flavor—not bubbles. Yet in today's RTD cocktail market, carbonation has quietly become one of the biggest design decisions behind every can. Many hard seltzers and canned cocktails are carbonated at levels approaching soft drinks, creating an aggressive fizz that can overpower flavor and leave some people feeling bloated or uncomfortable. At Biza Lightly Sparkling Island Cocktails, we took a different approach. We believe carbonation should support the cocktail—not become the cocktail.
The science behind carbonation is surprisingly straightforward. Carbon dioxide (COâ‚‚) dissolves into a beverage under pressure, forming carbonic acid, which creates the familiar tingling sensation. While enjoyable for many people, higher carbonation also increases the amount of gas entering the stomach. That extra gas can promote burping, increase stomach distension, and in some individuals temporarily reduce the pressure of the lower esophageal sphincter—the valve that helps keep stomach contents from flowing back into the esophagus. Researchers have shown that carbonated beverages can briefly lower esophageal pH and transiently relax this valve, which may contribute to reflux symptoms in people who are already susceptible, although the overall evidence does not show that carbonation itself causes GERD or permanently damages the esophagus.
This distinction matters. Carbonation doesn't appear to be the root cause of heartburn for healthy people, but more carbonation means more gas, and for people prone to acid reflux, bloating, or sensitive digestion, that additional pressure can make symptoms more noticeable. Beverage acidity, alcohol, citrus ingredients, and individual physiology also play important roles. Studies have consistently found that soft drinks with higher acidity are commonly reported as heartburn triggers, and people with GERD or IBS often report that highly carbonated beverages worsen bloating or reflux.

Beer typically falls around 2.4–2.7 volumes, while many RTDs, hard seltzers, sparkling waters, and soft drinks commonly range around 3.0–3.5 volumes, with cola-style sodas among the most highly carbonated beverages on the market. Biza was designed closer to the lower end of the RTD spectrum because we wanted carbonation to lift the aroma and refresh the palate without overwhelming the cocktail or masking its layered flavor profile. Lower carbonation also allows more of the fruit aroma and mouthfeel to shine through, creating a smoother drinking experience rather than an intensely fizzy one.
